沾酱调味料:
Sauce's Ingredients:
烧烤酱 | 2汤匙 |
BBQ sauce | 2 tablespoons |
萝卜碎 | 100克 |
blended carrot | 100g |
柠檬汁 | 2茶匙 |
lemon juice | 2 teaspoons |
清水 | 50毫升 |
Water | 50ml |
肉卷做法:
Making Steps for Meat Roll:
1)将大葱、蒜头和新鲜蘑菇搅碎,炒干,备用。
Blend onion, garlic and fresh mushrooms. Stir fry to dry and ready for use.
2)将红萝卜搅碎,分成两份:一份是给肉卷,另一份是给沾酱。
Blend carrot and separate into 2 portions: one is for the meat roll and another one is for sauce.
3)摊开保鲜纸,备用。
Prepare cling wrap for use.
4)在鸡胸肉的上下之间向横剖开,让其变成一大片和更薄。
Slice the chicken breast into half. Make it thinner and bigger piece.
5)将肉片放到保鲜膜上,先把调味料涂抹在肉片上,然后把搅碎的材料一层层铺上。最后,用保鲜膜把肉片和馅料紧紧包住。
Place the meat on cling wrap. Add seasoning to the meat and place the blended ingredients layer by layer. Then, use cling wrap to wrap its filling and the meat.
6)把肉卷放进冰箱15分钟,使它定型。
Put the meat roll into refrigerator for 15 minutes.
7)将锅和烤箱预热(温度200度)。
Preheat cooking pan and oven (temperature = 200 degree Celsius).
8)拿出肉卷。打开保鲜膜,用牙签把开口处封起来。
Take out meat roll from refrigerator. Open up cling wrap and use tooth pick to secure the opening.
9)先用锅煎肉卷的表层。略熟后,把肉卷放到锡纸上包起来,放入烤箱烘烤20分钟。
Pan fry the outer layer of meat roll. When it is slightly cooked, place it on aluminium foil and wrap it. Oven bake for 20 minutes.
10)把锡纸打开,直接烘烤肉卷8分钟。
Open up the aluminium foil and bake the meat roll for another 8 minutes.
11)把牙签取走,将肉卷切片,准备上菜。
Remove tooth pick from meat roll. Slice the meat roll and ready to serve.
薯泥做法:
Cooking Steps for Mashed Potato:
1)将土豆切成小块,蒸熟。
Chop potatoes into small pieces and steam.
2)把蒸熟的土豆搅碎,倒入牛油和盐一起搅拌至均匀。
Mash the potatoes and mix well with butter & salt.
沾酱做法:
Cooking Steps for Sauce:
3)把锅预热,倒入食油,先爆香萝卜碎。
Preheat the cooking pan, add cooking oil and saute the blended carrot.
4)加入烧烤酱和清水。
Add in BBQ sauce and water.
5)最后加入柠檬汁,翻炒约1分钟即可。
Lastly, add in lemon juice and cook for approximately a minute. It is ready to serve.

Little Tips:
鸡肉卷可以用其他肉类代替,如猪肉、牛肉等。
Can use other type of meat to replace chicken breast, e.g. pork, beef etc..
鸡肉卷可以配搭不同的主食和配菜,如面条、土豆、沙拉等。
Meat roll can mix well with different types of staple food, e.g. spaghetti, mashed potato, salad etc..
